BAKED Sunday Mornings: Coffee Ice Cream
Amazing! A Baked: Explorations recipe that didn't involve every dish in the house. This week's pick was coffee ice cream. Now, I am not a coffee person, but I love coffee ice cream. I have made David Lebovitz's coffee ice cream before and it is good ice cream, but the bitter coffee flavor is a little bit too strong for me. Maybe it is the beans I am using? I was hoping that this version might have a different coffee flavor, since it uses espresso powder and Kahlua to give the coffee flavor. I think something might have gone wrong when I added the salt (like maybe I added 2 teaspoons by accident or something), because the base was really salty. It actually reminded me more of salted caramel ice cream than coffee ice cream. It was actually really interesting and I enjoyed eating it, but I want to make this again to see what it really tastes like. Head over to the Baked Sunday Mornings blog to see how everyone else did.
I put this ice cream on top of a chocolate cake with coffee glaze (that I will blog about later) and the combination was great. The cake was able to cut some of the salt flavor.

Several of the bakers have mentioned the saltiness. I made this recipe about a week ago and I think I remember reducing the amount of salt to just a pinch since the amount called for seemed excessive. Great idea to pair this with a chocolate cake!
ReplyDeleteI think a few people had issues with the salt... Mine didn't taste overly salty, but I don't remember if maybe I used coarse salt? Yours looks great! Must have been delicious with chocolate cake!

ReplyDeleteI am sure you didn't add 2 teaspoons because I added 1 the first time I made this and we could only taste the salt! It totally overwhelmed the coffee, but I made it again with just a pinch and it was delicious. I had to make a chocolate sauce to salvage my first attempt. I love your photo of the ice cream and cake!
ReplyDeleteI definitely want to try the David Lebovitz version, too! Chocolate cake with coffee glaze sounds delicious in and of itself -- I can only imagine it was over the top with the ice cream!
ReplyDeleteI don't drink coffee, but the texture of this was wonderful. My husband, and the rest of my family, really loved it. I think it would be worth a second try.

Yep. Take a black pen and scratch out 1 teaspoon and write in 1 pinch and the salt amount will be perfect. And...I love your peach ice cream too. This is a good base, however, and I plan to make another flavor this week.
ReplyDeleteYikes...not sure I'd be thrilled with salty ice cream. I must have reduced the salt amount by intuition. Perfect pairing with your yummy cake!
